You can often hear it is called Russian Osetra caviar as eggs used to be harvested from the fish in the Caspian Sea. Because of unlimited fishing, they are vanishing from the surface of the globe and are nearly on the brink of extinction. That is why nowadays delicacy is mostly produced on aquafarms in all over the world but still called “Russian”. Importing Russian Osetra fingerlings from the Caspian Sea, one of the most reliable Israeli fish farms “Caviar Galilee” produces Karat Caviar, which is known for large firm eggs with a smooth buttery taste. Sturgeon caviar can be of different types: pressed, unscreened, pasteurized grained and fresh-grained jar caviar.

  • Pressed caviar is usually stored for about eight months. It is a great choice for the occasions when it is unsuitable to serve Sturgeon eggs in the form of a whole-grain product. Through a gentle pressing process, the delicacy achieves a highly concentrated consistency in order to be enormously suitable for spreading;
  • Unscreened type is not that attractive in appearance; its shelf life is pretty low – less than a month, after which it starts to oxidize;
  • Fresh-grained jar Osetra caviar can be kept a little over two months. It has three grades depending on size of the granules, taste, smell, consistency and color: highest, first and second;
  • Pasteurized grained eggs are stored for eight months in glass jars, and for ten months in cans. Such terms are achieved through the pasteurization process in hot water at a temperature of sixty degrees. However, it is a bit hard to keep this pasteurized product at home as it requires the temperature of 0 to -3 degrees Centigrade to be fresh and not spoiled.

Talking about Ossetra caviar, it has following characteristics: eggs are medium to large in size and brown, greenish or yellow in color. Twenty-year-old Sturgeon gives black eggs that are called “imperial black caviar”. Harvested from specially selected fish, the delicacy is considered to be unique on the market, that is why only true gourmets can allow themselves to enjoy the pleasure of the product. There can be no regrets – this treasure is extremely creamy and rich in taste. Nevertheless, there is even more valuable type of the product – “golden osetra” that is called imperial or royal caviar. It was originally obtained from the Sterlet Sturgeon, but the species is now largely extinct. For this reason, nowadays Golden Osetra caviar comes from the White Sturgeon (Albino). It is regarded as one of the masterpieces of modern cuisine.

The delicacy contains a large number of ingredients that are beneficial to human health, including:

  • large amounts of iodine;
  • magnesium;
  • sodium;
  • vitamins of different groups;
  • calcium;
  • phosphorus;
  • iron;
  • acids of different types;
  • other nutrients.

However, be very attentive, as the eggs can become a real poison. There are botulism pathogens in the Sturgeon guts that can easily get into the body of the fish or its eggs if not to cut it alive. This process is possible only in specialized factories with modern equipment.
